This is a fantastic recipe and one of my favourites to bake as it has always turned out fabulously. A firm staffroom favourite and one which you can adapt to your own tastes. Also a great way of using up over-ripe bananas!
Ingredients:
250g plain flour
115g dark brown muscovado sugar
115g unsalted butter
1 tsp bicarb of soda
2 eggs
pinch of salt
500g mashed banana
Makes one large loaf
Prep Time: 20 mins
Baking Time: 30-35 mins
Method:
- Pre-heat your oven to 180oc/ 350oF or Gas mark 4, and line your loaf tin. I have also tried baking this recipe in a 9inch x 9inch baking tray, which worked equally as well.
- In a large mixing bowl, cream your butter and sugar together till light and fluffy.
- Stir in your eggs and mashed banana till well combined.
- Sift your flour, bicarb and salt to the mix and fold in.
- Transfer the mix to your prepared loaf tin and sprinkle the top with a little bit of extra sugar (this will almost go like caramel and give you a nice crunchy top mmmmm).
- Bake for 30 minutes or till a knife comes out clean.
- Perfect for a mid morning break with a good cup of English tea!
