Makes 12 fairy cakes
Prep Time: 20 mins
Baking Time: 10-12 mins
Method:
- Preheat your oven to 180C/350F/Gas 4 and line a 12 hole fairy cake tin with paper cases.
- Cream the butter and sugar together in a bowl until pale and fluffy. Beat in your eggs, one at a time, and stir in the vanilla extract.
- Fold in your flour till the mixture is well combined, but don't over mix. Spoon the mixture into the paper cases until they are roughly half full.
- Bake in the oven for 10-12 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Leave to cool.
- To make your Buttercream, beat the butter until smooth and creamy, then gradually beat in your icing sugar. Beat in a few drops of vanilla extract and food colouring if you're using it too.
- Spread this on top of your cakes and add decorations of your choice.
